I may have used a couple extra than were required and probably will be thinning the soup a bit this week. Over all I've made it multiple times to rave reviews. I also added a smidgen of chopped jalapeno (What can I say? (Not that it is a difficult recipe in the first place! It is creamy, hearty, absolutely delicious, and happens to be vegan too. I used milk instead of cream because I didn't have any. I used vegetable broth instead of chicken broth. This is an excellent slow-cooker recipe I got from my sister. It turned out perfectly. I skipped the cream because I like it lighter. !This was good but I didn't find it as wonderful as so many others did. I did end up adding some onion and garlic powder at the end. I like texture so I only pureed half of the soup and I used white grape juice instead of the wine. I didn't exactly follow the recipe -- I left some of the soup chunky, and used one cup of milk and a tablespoon of butter in place of the cream.
I upped the wine to 1 cup and used less water.

This is a great comforting soup for a winter day. I haven't tried the cream on top, I probably will, but with 8 TBLs of butter, it's very rich as is. the recipe :)My first time cooking leeks so I mistakenly cooked the whole thing instead of just the white and pale part which darkened the color but didn't negatively affect the taste. Honestly I couldn't really taste it.
If the wine is nice, the flavor will be divine.
Will try subbing some of the remaining with olive oil next time for health reasons.This was delicious.
